Great Venison Recipes Are Hard To Find

Old hunting secrets and venison recipes.   There are Top-Secret government documents that don’t see the care these secrets receive in family lore.  These are passed down from father or mother to son or daughter in the same confidence as might talk about the weird uncle that likes to wear dresses once in awhile.  You just don’t tell everybody.

At Wilderness Recipes, we don’t have any weird cross-dressing uncles, but we have plenty of Venison Recipes.  We don’t stop there.  Wilderness Recipes has a bountiful supply of Wild Game Recipes for any occasion or set of taste buds.  One of our family favorites is Venison Stroganoff.  Next to venison jerky and venison sausage, has acheived the “Most Requested” status in our extended family.  We actually had a request to make a batch to feed 40 people for a nephews birthday party.  Because of the huge amount of requests we receive for this recipe, we decided to share it with all our friends here.

Venison Stroganoff

Ingredients

1    lb. ground venison 
 1    medium onion, chopped 
 2    T. butter
 1    clove garlic, minced
 1    tsp salt
 ½  tsp paprika
 *    pepper (to taste) 
 *    parsley (to taste)
 1   T. Worcestershire sauce
 1   can cream of chicken soup
 1   can beef broth
 1   cup sour cream

Methods/steps

  1. In a large skillet or Dutch oven, cook venison, onion, butter, garlic, salt, paprika, pepper and parsley over medium heat until onion is tender.
  2. Add Worcestershire sauce and cook 5 minutes, stirring constantly.
  3. Add soup and broth to venison and simmer for 10 minutes.
  4. Add sour cream and heat through.
  5. Serve over Egg Noodles or Mashed Potatoes.

Pass It On - Outdoor Mentors For Kids

I have discussed before that too many kids are spending too little time outdoors and too much time on their PlayStations and chatting on the internet.  And that is a problem that is drawing more attention from lots of different audiences today.

I ran across an organization that is working to change this trend.  Pass It On - Outdoor Mentors is a Wichita, Kansas-based national organization dedicated to providing children with mentors who will share with them the experiences of traditional outdoor activities.  The heart of the group’s mission is to give children opportunities to connect with nature that they more than likely won’t have without a mentor showing them the way.  Partnering with organizations like Big Brothers Big Sisters, Pheasants Forever, the National Shooting Sports Foundation, Delta Waterfowl, the Rocky Mountain Elk Foundation and the National Wild Turkey Federation, among others, volunteers with a passion for the outdoors can give a child the chance to go fish, hunt, or simply spend time in the fields with a caring adult.

Research shows that millions of men and women would gladly accept an invitation to go shooting or hunting if invited. That’s good news for all who share a love for the great outdoors.

The mission of STEP OUTSIDE, a program of the National Shooting Sports Foundation, is to increase participation in and support of hunting and the shooting sports.  STEP OUTSIDE encourages outdoor enthusiasts to mentor newcomers by inviting them to participate in these traditional outdoor activities.

Who Cares About “Where’s the Beef?”

Delicious and healthy venison has been a secret among hunters, their family and friends. It is part of the reward to those that loved the hunt. Besides the allure of nature’s beauty, the hunt and the camaraderie of the deer camp, the rich, tender and wholesome venison was the icing on the cake for the investment in guns, gear and time. Venison for the most part could not be found commercially in restaurants or meat markets. The need for USDA inspection prevented venison from moving from the sights of a gun to the dinner table for those that did not actually shoot it or know someone that did.

A strange thing happened with the consumption of venison in America over the last 70–100 years. History suggests that venison has been consumed as a food longer than other meats, including beef, chicken and pork, that are more popular today. During the first part of the last century, venison was still a staple for many families. The urbanization of America and industrialized production of meat began to change our eating habits. The ability of putting your own food on the table was being replaced by packaged meat from the grocery store or meat market.

Well, that is beginning to change.  Many are find out about the health benefits that venison provides and how delicious it is.  It is beginning to become the “in” meat.  The demand for venison is rising and domestic deer farms are trying to keep up.  Venison is showing up on menus for fine restaurants and grocery stores in greater regularity.

Wisconsin Assembly Passes Bill to Recruit Young Hunters

Legislation making it easier for sportsmen and women to pass their hunting heritage to the next generation cleared another hurdle this month as the Wisconsin State Assembly passed it by a voice vote.  Voice votes are generally used on measures deemed uncontroversial.

Senate Bill 167, sponsored by Sen. Jim Holperin (D-Conover), will allow people 10-year of age and older to hunt with an experienced mentor.  The bill passed the Senate on June 9 by a 27-6 vote.  The measure now awaits the signature of Governor Jim Doyle to become law. (more…)

Stepping Up to the Plate for Hunters Rights

The U.S. Senate is stepping up to the plate for hunter’s rights and preserving a great American tradition.  The introduction of a new bill attempts to thwart the limitation of hunter’s rights by preventing Federal lands open to hunters being made off limits.

Several U.S. Senators recently introduced Senate Bill 1522, the Hunting Heritage Protection Act, that would effectively establish the right to hunt and trap on federal lands in much the same way that many states have amended their constitutions to guarantee similar rights to hunting and trapping in those states.

U.S. Senator Saxby Chambliss (R-Ga.) and U.S. Senator Max Baucus (D-Mont.) have introduced the Hunting Heritage Protection Act, which aims to recognize the heritage of hunting and provide opportunities for continued hunting on federal public land.  The Senators also cosponsored a similar measure in previous congresses and are members of the Congressional Sportsmen’s Caucus.

The bill would direct federal agencies to:

. . . manage Federal public land under the jurisdiction of the agency head in a manner that supports, promotes, and enhances recreational hunting opportunities . . .

“This legislation simply seeks to protect the rights of sportsmen to hunt on federal public lands all across America,” said Sen. Chambliss. “Hunting is truly an American tradition and a key component to our conservation and wildlife management practices. By maintaining designated levels of federal land for hunting, we are affording thousands of men, woman, boys and girls the opportunity to enjoy this great American pastime.” (more…)
